Why have we included Copenhagen in our coffee advent calendar this year?

This year we’ve chosen to focus a little less on coffee geekery and a little more on hygge.
But don’t worry—we’re still serving up 25 great and unique specialty coffee experiences.
And this year, every coffee comes with a story from Copenhagen.

We’ve chosen Copenhagen as the theme for this year’s Coffee Advent Calendar because we thought it would be hyggeligt to share our joy and excitement for our beautiful capital with you. We’ll take you on a “city walk” through Copenhagen, stopping at 24 unique landmarks, sharing fun anecdotes and little stories about interesting events throughout the city’s history.

This is our tribute to Copenhagen—our way of saying thanks for the special role the city has played in the rise of specialty coffee in Denmark, across Europe, and even the rest of the world. In the 2000s, Copenhagen was the epicenter of unique specialty coffee experiences, and today it remains one of the world’s leading cities for specialty coffee.

Background: From Black Filter Coffee to Specialty Coffee

In Denmark – and especially in Copenhagen – coffee culture for many years was defined by filter coffee at home and espresso as something slightly exotic on café menus. But in the early 2000s, a wave of quality-conscious baristas and small roasteries began to change that picture. The focus shifted from dark-roasted coffee to lighter roasts that highlighted terroir, varietals, and origin – much like in the world of wine.

A strong culture of quality and design: Danes have a long tradition of appreciating craftsmanship, taste, and aesthetics (just look at the food scene with Noma). That mindset naturally spilled over into coffee.

The Nordic flavor profile: Light-roasted coffee with bright, fruity acidity became almost a “Nordic signature.”

A strong community: Baristas, roasters, and cafés shared knowledge and inspired each other. Many international baristas also came to Copenhagen to learn.

Consumers kept up: Copenhageners quickly embraced the new coffee culture, and cafés could thrive by serving “nerdy coffee.”

The Result

Today, Copenhagen is firmly on the map as one of the world’s most important coffee cities – on par with Melbourne, Oslo, and Portland. When people talk about third wave coffee, Copenhagen is often mentioned as one of the places where the movement truly took off.

The city’s specialty coffee scene was born from a blend of skilled baristas, design and food culture, and bold cafés and roasters who dared to go against the grain with light roasts, transparency, and storytelling.

Martin Hildebrandt, Troels Poulsen, Jens Nørgaard, and Café Europa all played a key role in this story, closely tied to the international development of specialty coffee.

The Result

The Three Pioneers:

Martin Hildebrandt
  • Became Denmark’s first world champion in barista competitions, helping turn coffee craft into something serious in Copenhagen.
  • Inspired an entire generation of baristas to take competitions and quality seriously.
  • Often described as one of Copenhagen’s first “coffee personalities,” starting from his role as director of Café Europa.
  • Served as a judge at international competitions and built the bridge between Denmark and the growing global coffee scene.
Troels Overdal Poulsen
  • Won the World Barista Championship in Seattle in 2005 – the year before Klaus Thomsen of Coffee Collective took the title.
  • Also came out of the Café Europa community before joining Kontra Coffee, where he honed his skills and rose to the top.
Café Europa & Jens Nørgaard
  • As owner of Café Europa, Jens Nørgaard set the stage for one of the first cafés in Copenhagen to take espresso and coffee craft seriously.
  • Already in the 1990s, Café Europa was one of the few places where you could get a real cappuccino or espresso, long before the word “specialty coffee” was used in Denmark.
  • Many future leading figures – including Martin and Troels – worked there and used the café as a springboard for competitions and careers.

Copenhagen’s Path to Becoming a Specialty Coffee Hotspot

1990s
Café Europa 1989 on Amagertorv becomes one of the first places in Copenhagen where you can get serious espresso and cappuccino.  Many of Denmark’s first baristas – including Troels Poulsen – start here.  Martin Hildebrandt gets involved early in coffee culture and competitions, helping to build a professional barista scene in Denmark.
2002
Martin Hildebrandt wins an international world championship in the barista field (Latte Art/Barista World Championship).
He becomes the first Danish world champion in the barista craft. His win inspires a whole generation of Danish baristas to compete and take the craft seriously.
2005
Troels Overdal Poulsen (with background from Café Europa) wins the World Barista Championship in Seattle.
First official Danish world champion in WBC history.
A milestone that cements Denmark as an important player on the global coffee stage.
2006
Klaus Thomsen wins the World Barista Championship in Bern. Two Danish victories in two years bring massive international attention.
2007
Coffee Collective is founded by Klaus Thomsen, Peter Dupont, and Casper Engel Rasmussen.
2010s
Prolog Coffee opens in the Meatpacking District (2016), focusing on experimental fermentations and innovative flavor experiences. Democratic Coffee sets the standard for coffee bars with high-quality filter coffee and croissants.
La Cabra (originally from Aarhus) gains huge influence in Copenhagen and internationally.
2020s
Copenhagen is globally recognized as one of the world’s leading coffee cities.
Danish baristas continue to win awards in Cup Tasting, Latte Art, and Roasting.
The “Nordic flavor profile” (light roast, terroir-driven coffee) becomes a global reference point.
Copenhagen is highlighted in international media (e.g., Sprudge and European Coffee Trip) as one of the world’s top coffee cities.
Barista and brewing competitions still attract Danish participation and prizes.
A full ecosystem of small roasteries, coffee bars, and training programs makes the city a global benchmark.
